Since we started living our lives here in Sweden, we have embraced the beauty of foraging. We never imagined that foraging would bring us so much joy, while it can be quite an effort to undertake. It literally means: Obtaining food in the wild for free. And that is exactly what it is, nothing more, nothing less!
Our ancestors have been foraging their whole lives, knowing exactly what to pick from the forest. Whilst we have seem to forgotten how wild fruits look like. And when we think of wild picking, we certainly come up with berries and mushrooms. But we have another secret that is worth picking: NETTLE! Yes it is stingy, but it has an amazing flavour. Make sure to pick only the soft green top parts from the nettle, not later than end may/beginning june. They will be stringy after these dates. Once you have your basket filled, make pesto out of it! The activity can almost been done throughout the season at Södra Gård. In early spring you will find young spruces that provide edible twigs for alongside your supper or create a strong elixer that serves as coughing syrup. In summer you are surrounded by berries like raspberry, cloudberry, strawberries and many more. While in autumn mushrooms reveal themselves to be eaten. The nature reserve Glaskogen is the perfect spot to find these edible products of the wild.
